GLUTEN-FREE | VEGETARIAN | CANE SUGAR FREE
I looked online unsuccessfully for a gluten-free, grain-free sugar-free ricotta pancake so here it is…..kids approved & maximum six ingredients
3 organic eggs
1 cup almond meal
1 tablespoon psyllium husk (this helps bind)
1 1/2 cups (375g) ricotta
2 tablespoons buckwheat flour
Optional: 1 tablespoon coconut sugar
- Mix all ingredients together. Leave the buckwheat flour til last – only add if required (ie the recipe is quite wet)
- Fry on a low heat in your preferred oil or organic butter. they do take a while to cook (about 4 minutes each)
- Top with your favourite – peanut butter, honey, maple syrup, slices banana, choc chips
