Oat cookies

NUT-FREE | EGG-FREE | VEGETARIAN | CANE SUGAR FREE | 6 EASY PANTRY/FRIDGE INGREDIENTS | THERMOMIX

  • 120g organic butter
  • 50g honey (or maple)
  • 1tspn bicarb
  • 100g oats
  • 150g plain flour
  • 65g coconut sugar
  1. pre-heat the oven to 170 degrees celsius
  2. line an oven tray with unbleached baking paper
  3. Throw butter (lightly chopped) & honey in the thermo
  4. Set to 60 degrees for 2 minutes on speed 2
  5. add bicarb then 5 seconds on speed 2
  6. Add oats, flour & coconut sugar – REVERSE speed 4 for 10 seconds
  7. Shape cookies into preferred size – we did the first tray at about 5cm diameter & 2nd tray about double the size. Both options work perfectly
  8. Cook for 10 minutes @ 170 degrees celsius
  9. Cool on a rack

Where possible, I encourage you to buy your pantry staples by the scoop – we buy our oats, bicarb & coconut sugar from Naked Foods.

We love making recipes in our Thermomix – highly recommend it if you don’t already have one! We’ve had ours 3 years & it gets used daily for everything from making cookies, to pureeing veggies & even steaming dumplings!
